Do you like drinking baijiu? I think it's really too strong. Huangjiu goes down easier. It's only about twenty percent alcohol.
B 白酒可是中國的國酒。不同的地方有自己的白酒，可以通過它來了解中國。而且白酒在全世界的蒸餾酒裡也是獨樹一幟。
báijiǔ kěshì Zhōngguó de guójiǔ. bùtóng de dìfang yǒu zìjǐ de báijiǔ, kěyǐ tōngguò tā lái liǎojiě Zhōngguó. érqiě báijiǔ zài quánshìjiè de zhēngliú jiǔ lǐ yě shì dúshùyīzhì.
Baijiu is China's national alcohol. Different places have their own baijiu. You can use it to understand China. And baijiu is unique among the whole world's distilled beverages.

But huangjiu is not too shabby. It's China's best fermented alcohol. The delicate flavor represents the fine culture of the regions south of the Yangtze River.
B 說起來倒挺好玩的。不過黃酒之所以成為江南的特產，還是因為白酒的“壓制”。

B 黃酒起初也像白酒一樣，全國各地有自己的釀造傳統。可是因為白酒發展得太快了，導致黃酒的產地也受到影響，逐漸縮小到江南一帶。
huángjiǔ qǐchū yě xiàng báijiǔ yīyàng, quánguó gèdì yǒu zìjǐ de niàngzào chuántǒng. kěshì yīnwèi báijiǔ fāzhǎn de tài kuài le, dǎozhì huángjiǔ de chǎndì yě shòudào yǐngxiǎng, zhújiàn suōxiǎo dào jiāngnán yīdài.
In the beginning, huangjiu was like baijiu: every place in the country had its own fermentation traditions. But because baijiu developed too quickly, it influenced huangjiu's areas of production. Gradually, it was compressed into the areas south of the Yangtze.

B 這點倒是被你說中了。不過白酒、黃酒也有好多相似的地方，比如類型都很多。

Well, you hit the nail on the head. But there are a lot of similarities between baijiu and huangjiu. For instance, there are a lot of types of both.
A 嗯，黃酒按糖的含量分成幹黃、半乾、半甜和甜黃酒。偏幹類型的口味比較純，稍微有點兒鹹。我比較喜歡甜的黃酒，喝起來很粘稠。

Oh, huangjiu is classified according to its sugar content. There are: dry, half-dry, half-sweet and sweet huangjius. The drier types have a purer taste, with a bit of saltiness. I rather like sweeter huangjiu. It's syrupy when you drink it.
B 黃酒味道是不錯，但是香味絕對沒法和白酒比。開一瓶茅臺，滿屋子馬上都是香氣。
huángjiǔ wèidao shì bùcuò, dànshì xiāngwèi juéduì méifǎ hé báijiǔ bǐ. kāi yī píng Máotái , mǎn wūzi mǎshàng dōu shì xiāngqì.
The flavor of huangjiu is really not bad at all. But when it comes to fragrance, there's no way it can compare to baijiu. Open a bottle of Maotai and in a flash the whole room is filled with its scent.

B 對，這是一種類型。白酒按香型分類，有醬香，米香，清香，濃香。這幾年還有一些新的香型。也說不出哪種最好，喝酒嘛，見仁見智。
duì, zhè shì yīzhǒng lèixíng. báijiǔ àn xiāngxíng fēnlèi, yǒu jiàngxiāng, mǐxiāng, qīngxiāng, nóngxiāng. zhè jǐ nián hái yǒu yīxiē xīn de xiāngxíng. yě shuōbuchū nǎ zhǒng zuìhǎo, hējiǔ ma, jiànrénjiànzhì.
Right, that's one kind. Baijiu is classified by its aroma. There is the fermented scent, the rice scent, the clean scent, and the strong scent. In the last few years there have been some new kinds of scents. It's hard to say which is the best. When it comes to drinking, everyone has their own favorite.
A 不過好多人喝白酒才不是為了口味呢，而是衝著度數。社交場合為了證明自己酒量好，或者夠朋友，講義氣，一定要喝度數高的白酒。好多人喝了吐，吐了喝，就是為了有一天能喝下半斤白酒。
bùguò hǎo duō rén hē báijiǔ cái bù shì wèile kǒuwèi ne, érshì chòngzhe dùshù. shèjiāo chǎnghé wèile zhèngmíng zìjǐ jiǔliàng hǎo, huòzhě gòu péngyou, jiǎng yìqi, yīdìng yào hē dùshù gāo de báijiǔ. hǎo duō rén hē le tù, tù le hē, jiùshì wèile yǒuyītiān néng hēxià bàn jīn báijiǔ.
But a lot of people don't drink baijiu for the flavor. They are taking advantage of its potency. When you're networking, to prove that you have a good drinking capacity or that you are a good enough friend, who values the code of brotherhood, you definitely need to drink the most potent baijiu. A lot of people puke after drinking and drink after puking. They do it so that one day they'll be able to drink a half bottle of baijiu.

Ugh, it's enough for me just to smell that stuff. If I drink a little bit I feel like my entire throat is on fire. But when you're cooking, it's nice to add a little baijiu. The flavor is really good.
B 燒菜還是放黃酒好。放白酒小心喝醉了。對了，你喝黃酒的時候喜歡吃什麼？

It's better to use huangjiu when cooking. Be careful: if you use baijiu, you could get drunk. Oh, right, when you drink huangjiu what do you like to eat?

A 小時候看武俠片裡的大俠都是大塊吃肉，大碗喝酒。現在知道這都是藝術加工。喝這麼多不酒精中毒才怪。
